Chicken Quinoa Cabbage Soup

This was such a hit and was a last minute idea. I love it when meals happen that way!

This is based off of homemade Chicken Noodle soup, but is great for those who are gluten sensitive because there are no noodles here!

 

 

3 chicken breasts

1/2 head of green cabbage

Carrots

Onion

Celery

1 1/2 cups dry Quinoa

Put Quinoa in bowl with water and soak.

Fill pot full of water and boil chicken. Chop carrots and add to water. Cook until soft. Add chopped green cabbage, onion and celery. Drain Quinoa and rinse thouroghly, add to pot of ingredients. Add poultry seasoning, salt and pepper to taste. Pull Chicken breast out and shred. Add chicken back to pot and let simmer for 20 min.

You may or may not need to add more water, depending on how much you started with.

Tortilla Quinoa Salad



I didn't know what else to call this, it was just something I put together and wanted to share with you. Kind of the idea at a Costa Vida or something where the put your salad on a fresh warm tortilla.......

 

 

I make homemade Spelt Tortilla's  and then top it with a yummy salad.

Make a salad with any veggies you want.

I use Romaine or Leafy Green Lettuce.

We always have some kind of sprouted, low cooked beans. (Kidney in this one)

Mushrooms

Tomatoes

Green onions

Bell peppers

Then we add some sprouted low cooked Quinoa and top it with our favorite dressing. Homemade creamy ones are the best :)

CAUTION: This is extremely filling so watch your portions closely to avoid uncomfortable fullness :)
